Smart Hospitality was approached by Chelsea Football Club to design a menu and provide high-quality for their Player of the Year Awards, 2007. A key stipulation was that the menu would be appreciated by the clubs top footballers (the entire 1st team were to be present) but also by paying guests. After careful consideration, the solution was to offer a choice of main courses for the players, while serving a superb fixed menu to the 1,000 guests. Having discussed the player's dietary requirements with the club we suggested a Roast Loin of Cod with wilted Spinach and a Cauliflower and Parsley Mash. The dish proved extremely popular on the evening. |
